Buy an Edge Pro Apex. It is expensive but for those of us who like to sharpen our knives properly, it's well worth the money.

Speak to Ben Dale. He came across as a very nice person. http://www.edgeproinc.com/

P.S.: They were having some site problems (online order wise) earlier in May but it should have been fixed by now. Postage from the U.S. was quoted at $80.00 or 85.00, so it's worth asking someone to bring it down.
